I admit, I love Ina Garten, the Barefoot Contessa and I watch her on Food Network. I love how she makes fabulous looking dishes with fairly simple ingredients and techniques. But I have never made one of her recipes. I found a group, called the Barefoot Bloggers, who make several Barefoot Contessa recipes each month. I haven't formally joined their group, but I've decided to play along. This week the recipe was Chinese Chicken Salad. I was worried that I might not like the dressing, but it was all delicious. The recipe calls for red pepper, but I don't like it, so I didn't add it. Next time I might add some more veggies, like broccoli. To make a dinner meal, I put the chicken and asparagus over some brown rice and then drizzled the dressing on top. The leftovers have been yummy as wraps. Tim even took one riding on Saturday. The dressing/suace is a winner - Tim thinks a little red pepper flakes make it even better. If anyone has suggestions for other ways we can use the dressing/sauce, I'd love to hear them.
